Okay, I love bananas. So I thought why not make banana bread? This version has very few ingredients, so you would more than likely only have to purchase one or two cheap products to make this. Okay, enough talk, more banana bread.
2 large mashed bananas
250 mls coconut milk (please ensure that the coconut milk hasn’t separted, unlike myself, who simply dumped what I thought was 240 mls from the tin into the bowl with the rest of the ingredients, only to find that the liquid part was in the bottom of the tin)
250 g self-raising flour
240 g sugar
1-2 tsps vanilla essence
60 g soya butter
icing sugar, to dust
- Simply add everything into a bowl, and mix together, until nice and silky smooth with an electric whisk (or a hand whisk if you enjoy a good arm workout!)
- Pour mixture into a loaf tin which has been buttered up with soya butter and bake for around 1 hour at 180 degrees celsius.
- Poke the bread with some pointy utensil after the hour, and once the utensil comes out clean it’s ready to come out.
- Sprinkle with icing sugar, and serve warm with soya butter.
A slice of this bread can easily be heated up in the microwave, and served with berries.
