Chocolate and Orange Cupcake Fun

I love chocolate. And oranges. So who wouldn’t love the two combined? Even my dad likes these, and let me tell you this – he is NOT a cupcake man. So that in itself should be enough to persuade you to whip a batch of these up. The method is ridiculously easy – just weigh everything up, throw it into a bowl and combine. The cupcakes end up being the perfect consistency. Not at all dry, nice and fluffy, soft and light. Everything that makes a cupcake, a cupcake. They really are just the perfect little treat when you get home after being out in this cold weather. These cupcakes are a comfort in themselves.

Ingredients:

150g self-raising flour

125g caster sugar

125g soya butter

2 eggs

30g coca powder

finely grated zest of 1 medium-sized orange

pinch of salt

Instructions:

  • Simply combine everything in a bowl and beat with a hand mixer for around 1 1/2 minutes.
  • Pour the batter into pretty cupcake cases or into a greased cupcake pan.
  • Bake at 180 degrees celsius for 20 minutes.

These versatile little cupcakes could be served piped with any form of buttercream or icing. They can only keep on getting better. 🙂
